Restaurant, Hotel and Hospitality OVERVIEW

Global restaurant sales will approach $2.6 trillion this year, hotel revenues roughly $955 billion, and U.S. food-service receipts have already topped $1.1 trillion for 2024, an all-time high that underscores a sector roaring back from pandemic lows.
1. Labor Crunch ? Automation Surge
Rising wages is putting pressure on restaurant owners in many U.S. states.  California’s 2024 fast-food law set a $20/hour floor, and demographic shortages are tightening labor pools worldwide as well.  Operators are responding with robotics, from burger-flipping “Flippy” arms to room-service bots, and self-service kiosks that enable guests order, pay and even unlock rooms without human help.
2. Delivery, Ghost Kitchens & Restaurant-as-Software
Consumers permanently adopted digital ordering during the Coronavirus pandemic, and delivery apps still command 15-30 % of each check.  To defend margins, brands are building ghost kitchens that skip dining rooms altogether or leasing turnkey bays from platforms such as CloudKitchens and Wonder.  Watch for more multi-brand virtual restaurants where one line cook fulfills several menu concepts simultaneously.
3. Artificial Intelligence (AI) Becomes Front-of-House
AI is moving from novelty to infrastructure.  Yum! Brands is rolling voice-AI order-takers to approximately 500 drive-thru lanes this year in partnership with NVIDIA, promising faster lines and automated upselling.  Hotels are similarly piloting AI concierges that learn guest preferences, adjust lighting and thermostats via internet of things (IoT) links and answer multilingual FAQs around the clock.
4. Experience Is the New Luxury
Millennials and Gen Z prize “Instagrammable” authenticity over formality, fueling demand for hyper-local food, craft brews and adventure or volunteer itineraries.  Eco-certified lodges, carbon-light river cruises and fitness-equipped Five Feet to Fitness rooms all speak to travelers who want wellness and a lighter footprint without sacrificing comfort.
5. Home-Sharing Remakes Lodging Economics
With 7.7 million active Airbnb listings spanning 100,000 cities, the sharing economy has carved deeply into hotel market share.  Chains are fighting back by pushing direct-booking perks, launching branded home-rental arms and experimenting with micro-rooms and extended-stay studios that trade square footage for price and flexibility.
6. Online Travel Agencies (OTAs) vs. Brands—The Loyalty War
OTAs still scoop up double-digit commissions, but hotels are leveraging mobile check-in, digital keys and floor-plan room selection to lure guests back to proprietary apps where data, and loyalty points, stay in-house.
7. Cruising at Two Scales: Mega-Ships & Micro-Expeditions
The Cruise Lines International Association (CLIA) forecasts 37.7 million ocean passengers in 2025.  Recent megaships include Royal Caribbean’s Icon of the Seas which offer passengers surf parks and botanical neighborhoods, while luxe 100- to 500-berth vessels and riverboats chase intimacy, shallow ports and adventure landings.
